Picking our Sauvignon Blanc at different ripeness levels gives this wine versatility and complexity. With natural acidity and citrus elements bestowed by the earlier pick, and juicy, tropical flavors as a result of the later pick, this Sauvignon Blanc is a layered and complex wine. Layered with notes of lime and fresh cut nectarine. To further enhance the mouthfeel, we barrel-fermented 100% of the wine in Acacia wood barrels and stirred them weekly.
